These Spiced Pear German Pancakes are an easy, oven-baked breakfast that tastes like a mix between pancakes and a Pear Tart. Buttery spiced pears are lightly roasted, then covered in a simple egg-based batter and baked until puffed and golden. A cozy, hands-off breakfast your whole family will love — perfect for winter mornings!
Ingredients
- 2-3 large pears
- 1 Tbsp cinnamon
- 2 tsp nutmeg
- 3 Tbsp butter
- 6 eggs
- 1 1/2 cups flour
- 2 1/2 cups milk
- 1/2 tsp salt
Instructions
- Preheat oven to 200*C fan forced (400*F convection)
- Line large baking sheet (SIZE) with baking paper (deeper lip is easier to handle)
- Dice pears and place in heap on baking sheet.
- Sprinkle cinnamon and nutmeg over pears, and drop the butter in dollops on top of the fruit.
- Place pears in oven for 5 minutes.
- After 5 minutes, butter will be melted. Using a spatula, mix pears, cinnamon and nutmeg, and butter on the baking sheet so pears are evenly covered with both, then spread pears evenly over surface of baking sheet.
- Return pears to oven for another 5 minutes.
- Crack eggs into a large mixing bowl and whisk together
- Add flour in 1/2 cup increments and whisk until smoothly incorporated into eggs.
- Add salt to egg mixture.
- Add milk in 1/2 cup increments to egg mixture, whisking to smoothly incorporate.
- Remove sheet pan with pears from oven, set on a flat, secure surface.
- Pour egg mixture over pears.
- Return sheet pan to the oven and bake for 20 minutes.
